PRU — an acronym of its own ethos, Plant, Raise, Understand — sits within Trisara on Phuket's north-west coast, and is the island's only Michelin-starred restaurant, holding both a Michelin Star and a Michelin Green Star for sustainability.
Chef Jimmy Ophorst builds a seasonal tasting menu almost entirely from PRU Jampa, the restaurant's own organic farm, and a handful of small Thai producers. The sea-facing, solar-powered room is built around a Kappo-style counter that looks straight into the open kitchen.
