A Black Pavilion on the Water

Black Ginger floats on a lagoon within The Slate, near Nai Yang on Phuket's quiet north-west coast — and getting there is part of the theatre: a small raft is pulled across the water to the restaurant's own island.

Inside the all-black timber Thai pavilion, with its temple-like carvings and glittering chandeliers, the kitchen sends out southern-Thai and Phuket specialities — from Moo Hong to massaman and local crab. It is one of the island's most atmospheric dining rooms.
